The other night, I decided to make Petrale Sole with a butter sauce and some oven roasted asparagus. This is an extremely easy recipe and a very simple dish to make. I got the idea from the sauce from a nugget market recipe card but I modified it a little bit.
Ingredients:
1 Bunch of Asparagus
4 4 ounce petrale sole filets
1/2 shallot, finely diced
1/2 lemon, juiced
5 tablespoons butter
3 tablespoons flour
olive oil
salt+pepper
How to cook the asparagus: Preheat oven to 400˚. Clean the asparagus in cold water and dry. Cut off the ends of the asparagus. evenly disperse asparagus on a baking sheet, being careful to not stack them on top of each other. Season Asparagus with salt, pepper and drizzle a little bit of olive oil over the top. Place into oven and roast for 15-20 minutes, checking on them periodically.

How to cook the Petrale Sole: lightly season each filet with salt and pepper on both sides. Proceed to lightly dust each filet with flour, shaking each filet in the air periodically to get rid of excess flour. Heat up a medium size non-stick skillet over a medium high heat. When hot, pour olive oil into pan as well as half of the butter. When the butter has melted, proceed to place 2 filets into the pan. Cook each filet for 2 minutes 30 seconds on each side, flipping each time. When 5 minutes has passed or the fish looks brown, pull it out and place it under a piece of tinfoil to stay warm. Add the other 1/2 of the butter and oil to the pan and Proceed to cook the other 2 filets the same way you cooked the first 2.

How to make the lemon and butter sauce: leaving the excess juices and butter from the fish in the pan, pour the diced shallots into the pan. Let them deglaze for a few minutes. When they smell fragrant and look a little brown, proceed to add a little bit of butter and the lemon juice. Then, let the sauce reduce for about 2 minutes and season it with salt and pepper. Drizzle the sauce over the fish.

Plating: place about 5 asparagus on the bottom of a plate. Proceed to place 2 filets of petrale sole on top and drizzle with your sauce. Enjoy!

Overall, this dish is very healthy and delicious as well. I really enjoyed making this dish because it was easy and did not require that many ingredients. Also, it is very easy to make during a busy weeknight. I hope you enjoy making and eating this dish as much as I did!
